Apple Cider Baked Donuts
The orchards and bakeries here in the mountains of central Virginia sell some amazing cider donuts every fall. Since they are one of my kids' favorite foods, I decided to create my own version that we can easily bake at home (no frying required!). Rich and crunchy, these donuts rise and are packed with warm fall flavor. my boysto worshipher... and I hope you love her too!

Why do they call them cider donuts?
These cake donuts get their warm, cozy fall flavor from the cinnamon, nutmeg, allspice, ginger and apple cider used in the dough - hence the name!

What Makes Apple Cider Donuts Different?
Unlike other cake donut batters, they contain apple cider. Not only does this special ingredient provide a fruity, tangy apple flavor, but the acidity of the cider also gives the donuts a soft, smooth texture and keeps them juicy.
Why are cider donuts so good?
The donuts are so delicious because they are almost always baked fresh in the orchard, with tangy local cider, lots of cinnamon and nutmeg, and a generous dusting of cinnamon and sugar. Baked or fried, it's hard to top an old-fashioned apple cider donut recipe!

Tips for the best baked apple donut recipe
- Measure the flour correctly.I like to measure my flour precisely, or you can use the spoon and level method. Use a spoon to lightly fill the measuring cup and flatten with the side of a knife. Do not take the flour directly from the container, otherwise you will fill the measuring cups with too much flour. Too much flour will result in thick, dry muffins!
- This recipe makes about 7-8 donuts.You need at least onedonut mold with 6 holes. If you have two donut pans, you can bake all the donuts at once. If you only have one pan, add the remaining batter to the pan to bake a second batch once the first batch is done.
- Getting the dough into the donut cavities can be tricky., so I always put the dough in a big ziploc bag or pastry bag, cut off a corner of the bag and put the dough in the pan.

FOR THE DONUTS:
- 2 soup spoon salted butter, softened at room temperature
- 2 soup spoon vegetable oil
- ¼ taxes granulated sugar
- 3 soup spoon packed light brown sugar
- 1 big egg
- ¾ teaspoon Spray
- ⅛ teaspoon Spray
- ½ teaspoon cinnamon
- ½ teaspoon ground nutmeg
- ⅛ teaspoon ground allspice
- ⅛ teaspoon powdered ginger
- ½ teaspoon Sal
- 1 teaspoon Vanilla extract
- 1 ⅓ bags (160 g) wheat flour
- ¼ taxes cidra
- ¼ taxes leite
FOR ASSEMBLY:
- ½ taxes (1 stick) salted butter, melted
- 1 taxes granulated sugar
- 1 soup spoon cinnamon
instructions
Preheat oven to 400°F. Spray a 6-cavity donut pan with nonstick spray. Put it aside.
BAKE DONUTS:
In a medium bowl, beat butter, vegetable oil, caster sugar and brown sugar until smooth.
Add the egg and beat to combine.
Stir in baking powder, baking soda, cinnamon, nutmeg, allspice, ginger, salt and vanilla.
On low speed, mix the flour into the butter mixture alternating with the apple cider and milk, starting and ending with the flour, making sure to mix well. (Then start with ⅓ of the flour, then all the cider, then another ⅓ of the flour, then all the milk, and lastly the rest of the flour.)
Pour batter into donut cavities and fill ⅔ to ¾ full. It helps to place the dough in a large ziplock bag, cut a corner off the bottom of the bag, and spoon the dough into each hollow of the donut.
Bake the donuts for about 10 to 11 minutes or until the edges are lightly browned.
Let the donuts cool in the pan for about 2 minutes, then invert them onto a wire rack. Bake the remaining donut batter (generally enough for 1-2 more donuts).
Let the donuts cool for about 10 minutes before coating them with cinnamon sugar.
COBRA THE DONUTS WITH CINNAMON SUGAR:
When the donuts are cool enough to touch (but still warm), prepare the frosting.
Place the melted butter in a small bowl. In a separate small bowl, combine the sugar and cinnamon.
Dip the donuts in melted butter and then in cinnamon sugar to coat all sides.
